Some of life’s lessons I will always be learning and re-learning. Here are just a few.

An early night to bed always feels good the next day. On average, a late one does not. Truth.

Saying ‘no’ is hard.

Red onion will repeat. Repeatedly.

The Afternoon Nap is a harsh mistress. Treat her with the utmost respect.

There is no such thing as ‘just a bit’ of Ben and Jerry’s. Don’t even try to pretend, just go with it. It’s a full tub or nothin’.

Facebook ain’t all that. Log out and get out.

Melted cheese is hot (repeat, HOT). Slow it down, girl. Deliciousness is worth the wait.

When it comes to baked goods, do not mess with the holy trinity: Butter, Flour and Sugar (…amen).

I have tried and tried to find a way to be good to my taste buds and good to my arteries in the same bite. I have never really found a way to really make it work. I’ve often come close, but no cigar.

So stuff it. Baking is about butter – deal with it. Close you’re eyes, arteries, because this one is not for you.

Baked goods are like watching The Real Housewives of (insert American city here). It was never meant to be good for you, but then again, it does feel good.

Just sit back. With a muffin. Let it happen. And then move on.

Introducing: Cinnamon crumble banana muffins.

They have banana (for flavour).

They have butter (for flavour).

They have cinnamon (for flavour).

They have chia seeds (for health).

They have your name (all over them).

So go ahead. Be bad. It’ll feel good.

Cinnamon crumble banana muffins.

230g self raising flour
3 ripe-as bananas (mash 2, chop 1).
1/3 cup yogurt
1 beaten egg
1/4 cup chia seeds
100g melted butter
1/3 cup honey
1.5 teaspoons cinnamon
Oats (optional)

Preheat your oven to 180 degrees celcius.

Mix flour, chia seeds and cinnamon in a big bowl.

In a separate bowl, mix the banana, yogurt, butter, egg and honey.

Add the wets to the dry and mix until just combined (don’t over work it)

If things look too dry, add a bit more yogurt. If they look too wet, add a hand full of oats.

Pour into a muffin tin and bake for 35-40 minutes.

Makes a bakers dozen (13).

This guy got a bit of a cinnamon-sugar shower. Lucky duck.

  1. nice!! im totally going to make these this week!… might even try the cinnamon sugar shower and pop back for 5 mins to melt it…
